This immersive workshop invites you to explore the fascinating world of coffee origins and sustainability when buying green coffee, guided by Morgan von Mantripp, roaster at von&vonnie. Over the course of 2 hours, you will deconstruct preconceived ideas about the flavour profiles of origins such as Brazil, Colombia and Ethiopia through a blind cupping with coffees that defy expectations.

In this practical and educational session, you'll learn how to:

  • Analise the impact of origin on the sensory profile of coffee;
  • Do a blind tasting (cupping) with technique and attention to defects;
  • Understand the criteria for buying green coffee: quality, price, transport, seasonality;
  • Explore the role of sustainability in coffee sourcing - including agricultural practices, trade relations and environmental impact;
  • Relating roasting knowledge to the choice of sustainable and purposeful coffees.

This workshop is suitable for baristas, roasters, curious coffee lovers and anyone interested in understanding how coffee gets from the origin to the cup - in an ethical and informed way.
