This advanced brewing workshop is aimed at coffee professionals and experienced enthusiasts who want to deepen their technical understanding of the extraction process in filter coffee (brewing).
Led by Hugo Ferraz, the workshop delves into the main variables that influence extraction - grind, ratio, time, temperature, water and turbulence - and how each impacts the sensory profile of the drink. Techniques for achieving consistency in preparation and strategies for fine-tuning recipes in a precise and informed way will be covered.
We'll explore how agitation influences the extraction rate, the importance of temperature as an adjustment tool and how the composition of the water can highlight (or hide) certain characteristics of the coffee.
This will be a time to question methods, test hypotheses and come out with more control over what you extract. It brings difficult questions - the Hugo is ready.
